Port Wine Cheese Fondue
1 lb. Original Herkimer® Port Wine cheese, cubed
1 cup stout beer or light-bodied red wine
Fresh grated nutmeg, to taste (optional)
For dipping: bread cubes, vegetables, small cooked pieces of meat, crackers, soft pretzels, breadsticks, bite-sized cubes of Yukon Gold or Red Bliss potatoes, etc.
On stovetop, combine beer or wine in saucepan over medium heat until it gently bubbles. Add Herkimer® Port Wine cheese and stir until smooth. Remove from heat. Stir in fresh grated nutmeg, if desired. Serve immediately in fondue pot, chafing dish, or warm cast iron skillet.
