Cheesy Bacon Twice-Baked Potatoes

6 russet potatoes
1 8oz. container Original Herkimer® Cheesy Bacon Heat & Pour Cheese Spread
1 cup shredded Original Herkimer® Aged NY Cheddar Cheese
2 green onions, finely sliced
Sour cream for garnish (optional)

Scrub potatoes clean, rub with olive oil and bake in a 400° oven for an hour or until fully cooked. Let potatoes rest until cool enough to touch. Cut in half horizontally and spoon out insides, leaving about ¼ inch of potato on the skin. Put scooped out potato in bowl, add container of Cheesy Bacon and mix until blended well. Put reserved mixture back into potato cups, top with shredded cheddar and green onions. Bake 5-10 minutes or until cheese is melted. Serve with sour cream.
