Spicy Beer-BBQ Nachos
This is a great way to use leftover BBQ chicken or pulled pork… or an excuse to make some!
1 bag tortilla chips
1 8oz. container Original Herkimer® Beer Cheese Spread
1 cup shredded Original Herkimer® Cheddar Cheese
1 cup BBQ chicken or pulled pork
½ cup diced tomatoes
½ cup diced red onion or caramelized onions
¼ cup sliced jalapenos (optional)
BBQ sauce (optional)
Preheat oven to 350°. Line cookie sheet with aluminum foil. Place single layer of chips on cookie sheet. Heat Original Herkimer® Beer Cheese Spread in microwave for 1 minute, stirring every 20 seconds. Pour half of Beer Cheese spread over layer of tortilla chips. Top with half of the shredded meat, cheddar cheese, tomatoes, onions & jalapenos. Make a second layer with chips and top with remaining ingredients. Cook in oven for 10 minutes or until cheese is melted and chips are warmed. Drizzle BBQ sauce over top & serve.
Tip: Cook boneless chicken or pork tenderloin in a crockpot with 12oz. of beer and ½ bottle of BBQ sauce on low 2 hours or until fully cooked. When fully cooked, shred chicken or pull pork with large forks. Flavorful & fuss-free! Leave in crockpot on warm, set out sandwich rolls, shredded Original Herkimer® Cheddar Cheese, and diced red onions, and you have a delicious & easy meal. Don’t forget to reserve one cup of cooked chicken or pork for nachos!
