Greek Cheese Mediterranean Nachos
These nachos are big on flavor! Making them in layers ensures that every chip will be fully loaded for maximum enjoyment.
1 bag pita chips or whole wheat tortilla chips
1 cup shredded Original Herkimer® Cheddar Cheese
1 8oz. container Original Herkimer® Greek Blend Cheese Spread
8 oz. sliced grilled chicken
1 handful fresh spinach leaves, washed, patted dry and chopped
1 cup sliced roasted red peppers
¼ cup sliced kalamata olives
¼ cup diced red onion
¼ cup chopped sundried tomatoes (optional)
Preheat oven to 350°. Line cookie sheet with aluminum foil. Place single layer of chips on cookie sheet. Heat Original Herkimer® Greek Blend Cheese Spread in microwave for 1 minute, stirring every 20 seconds. Pour half of Greek Blend spread over layer of tortilla chips. Top with half of the chicken, spinach, roasted red peppers, onions, olives and sundried tomatoes. Make a second layer with chips and top with remaining ingredients. Cook in oven for 10 minutes or until cheese is melted and chips are warmed. Garnish with cilantro. Can serve with hummus or fresh salsa.
