Slow-Cooker Broccoli Cheddar Soup
2 Tablespoons butter
1/4 cup flour
4 cups chicken or vegetable broth, low sodium
10 ounces broccoli, frozen
3 cups Original Herkimer® Aged Cheddar Cheese, shredded
1 garlic clove, minced
Salt and Pepper to taste
Heat butter in a skillet and whisk in the flour. Cook 1-3 minutes or until light brown. Next, add in the broth and whisk well so there are no flour lumps. Pour the entire mixture into a slow cooker, adding in the broccoli. Add garlic, salt and pepper. Cover. Cook on Low for 6 hours. Just before serving, add in shredded Original Herkimer® Aged NY Cheddar Cheese and stir until completely blended.
Optional: Serve with some steamed broccoli on top, and some sprinkles of cheese
Variation: Blend the soup by using a hand held stick (immersion) blender to blend some of the large broccoli florets. Thickens the broth, and makes the soup smoother.
NOTE: If you decide to blend the broccoli with the hand held stick blender, you would do this first and then add the cheese into the soup and stir until it is completely melted in the slow cooker. If you are not going to blend, just add before serving, and again make sure the cheese is completely blended.
