Herkimer Red Pepper Pasta Pie
9-inch frozen deep pie crust
2 tbsp. Butter or margarine
1 medium onion, thinly sliced
1 red peppers, thinly sliced
2 eggs, slightly beaten
1 cup milk
1 tsp. Salt
few grains cayenne
4 oz. Herkimer CHUTTER, softened
4 oz. Noodles or fettuccini, cooked & drained
Have crust ready. Sautee onions and pepper in butter until softened. Mix eggs, milk, salt and cayenne. Cut cheese into pieces and place on bottom of crust. Top with pasta, then onion and peppers. Pour milk mixture over all ingredients. Bake in 350 Degrees for 45 minutes, or until knife inserted in center comes out clean. Serves 6.
